Hey ho!
I’ve had some sort of crud (hacking, tired, sore throat) for five exhausting days. This morning I woke up feeling better and craving pancakes! When you’ve got a post-crud new lease on life you go where your craving takes you, right?
Pancakes have an aura of pleasure. The smell, the blueberries, the plush texture, the memory of sticky hands, the strand of hair glued to my daughter’s cheek with maple syrup! My kids were gaga for pancakes.
Since my husband is GF I haven’t been enjoying them. It’s a lot of effort for one person. But today, I am all in and I think you should be too. Make these for people you love or just for you. Happy start of summer!

Mixed Grain Pancakes
1/2 c ground walnuts, be careful they don’t turn to walnut butter! Grind them just so they look like wet sand
1c buckwheat flour
1c ground oatmeal
1t salt
2t baking soda
2T sugar
2 eggs
1-1/2c milk
2/3c cottage cheese
4T melted butter, cooled
1 pint blueberries
Mix all the dry ingredients in a large bowl.
In a medium bowl, beat the eggs, add milk, cottage cheese, and the cooled butter
Pour the wet ingredients into a the flour mixture and stir just until evenly moistened. It’s okay if it is lumpy (like life, right?). Let the batter sit for about 5 minutes.
Lightly oil a skillet and heat over medium until a drop of water splatters when you flick it in the pan. Pour about 1/4c of batter, sprinkle with a few blueberries. Wait for bubbles to appear all over the pancake and then flip. Cook until the underside is toasty, maybe 90 seconds or so. Serve straight away with butter and warm syrup. Toss on extra blueberries and add some pecans, because, why not?
